  • 1 cup cooked rice (white or brown, leftover)
  • 10 to 12 large flour tortillas (burrito-size, at least 10 inches)
  • Cooking spray or butter (for warming tortillas)

Instructions

  1. Cook the sausage: Heat a large skillet over medium-high heat. Add the breakfast sausage and break it apart with a spatula. Cook for 6 to 8 minutes, stirring occasionally, until browned and cooked through. Transfer the sausage to a large mixing bowl using a slotted spoon, leaving the drippings in the pan.
