  • 1 teaspoon granulated sugar (optional)
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns (whole)
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Wash and slice the cucumbers into ¼-inch (6 mm) thick rounds or spears, depending on preference.
  2. In a mixing bowl, combine 1 cup white vinegar, 1 cup water, 1 tablespoon kosher salt, and 1 teaspoon sugar. Stir until salt and sugar dissolve. Optionally warm the brine gently for 2-3 minutes and let cool completely before use.
  3. Place 3-4 sprigs of fresh dill, 3-4 smashed garlic cloves, 1 teaspoon mustard seeds, 1 teaspoon black peppercorns, and optional ¼ teaspoon red pepper flakes into each jar.
  4. Fill jars tightly but gently with cucumber slices, leaving about ½ inch headspace at the top.
  5. Pour the cooled brine over the cucumbers, ensuring they are fully submerged. Press down to release trapped air bubbles and seal jars tightly.
  6. Refrigerate the jars and let pickles sit for at least 24 hours before tasting; 2-3 days allows flavors to deepen.
