  • ¼ cup all-purpose flour (30g)
  • ¼ cup light brown sugar (50g), packed
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon salt
  • 3 tablespoons unsalted butter (42g), cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven. Place two 10-ounce ramekins or a small 1-quart baking dish on a baking sheet lined with parchment paper or foil.
  2. Peel, core, and slice the apples into ¼-inch thick pieces. You should have about 2 cups of sliced apples.
  3. In a medium bowl, toss the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Let sit for 5 minutes.
  4. In a small bowl, combine oats, flour, brown sugar, cinnamon, and salt. Stir with a fork. Add cold butter cubes and use a pastry cutter, two forks, or your fingertips to work the butter into the dry ingredients until the mixture looks like wet sand with some pea-sized butter chunks.
  5. Divide the apple mixture evenly between the ramekins (or spoon into the single baking dish). Dot the top of the apples with the small pieces of butter.
  6. Sprinkle the crisp topping evenly over the apples. Use your fingers to create some clumps. Do not press the topping down.
  7. Bake for 30 to 35 minutes, or until the filling is bubbly around the edges and the topping is golden brown and firm to the touch. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  8. Let the crisps rest on a wire rack for at least 10 minutes before serving. Serve warm, optionally with vanilla ice cream.
