A build-your-own nacho bar with seasoned beef, creamy cheese sauce, and all the fixings. Perfect for game day or any party, this customizable spread lets everyone create their perfect bite.

  • 1 lb ground beef (80/20 is ideal)
  • 1 tbsp olive oil (only if using extra lean beef)
  • 1 small yellow onion, finely diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • Salt and black pepper to taste
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups whole milk
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt to taste
  • 1 large bag (1316 oz) restaurant-style tortilla chips
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup canned corn kernels, drained
  • 1 large tomato, diced (seeds removed)
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1/4 cup pickled jalapeños
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1/2 cup pico de gallo (optional)
  • 1/2 cup shredded lettuce (optional)
  • 1/4 cup sliced black olives (optional)
  • Hot sauce (optional)

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook for 5-6 minutes, breaking it apart, until browned. Drain excess fat, leaving about 1 tablespoon. Add diced onion and cook for 2 minutes until softened. Add minced garlic and cook for 30 seconds. Sprinkle taco seasoning over beef, add 1/2 cup water, and stir. Simmer for 2-3 minutes until thickened. Keep warm.
  2. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly. Slowly pour in milk while whisking vigorously. Continue whisking until mixture thickens, about 2-3 minutes. Remove from heat. Add shredded cheddar cheese a handful at a time, whisking until fully melted. Stir in smoked paprika and cayenne. Add salt to taste. Keep covered.
  3. While beef and cheese cook, prep toppings: drain and rinse black beans, drain corn, dice tomato (remove seeds), dice avocado and toss with lime juice, chop cilantro, slice lime into wedges. Arrange everything in small bowls.
  4. Spread tortilla chips on a large platter or sheet pan in a single layer. Spoon seasoned beef over chips. Drizzle warm cheese sauce over everything. Scatter black beans and corn on top. Arrange remaining toppings (tomato, avocado, jalapeños, cilantro) around the platter or let guests add from bowls. Serve immediately with lime wedges and hot sauce.

Notes

For best results, shred your own cheese to avoid grainy sauce. Serve wet toppings (sour cream, pico de gallo) on the side to prevent soggy chips. Toast chips in a 350°F oven for 5 minutes before assembling for extra crunch. Make beef and cheese sauce a day ahead for stress-free hosting.
