Instructions

  1. Preheat oven to 350Β°F (175Β°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, black cocoa powder, baking soda, and salt until no lumps remain.
  3. Add buttermilk, vegetable oil, egg, and vanilla extract. Stir with a whisk until just combined. Batter will be thin.

Notes

Room temperature ingredients are crucial. Don’t overmix the batter. The vinegar reaction starts immediately, so work quickly. For pure white frosting, use clear vanilla extract. Unfrosted cupcakes can be stored at room temperature for up to 3 days; frosted cupcakes should be refrigerated for up to 5 days. The flavor improves after a day.
