  • 1 teaspoon baking powder
  • Β½ teaspoon baking soda
  • Β½ teaspoon salt
  • 1 cup (226 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • Β½ cup (110 g) light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • ΒΎ cup (about 90 g) rainbow sprinkles

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, beat the softened butter with granulated sugar and light brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Avoid overmixing.
  6. Gently fold in the rainbow sprinkles with a spatula, being careful not to crush them.
  7. Drop rounded spoonfuls of dough onto the prepared baking sheets, spacing about 2 inches apart. Press a few extra sprinkles on top of each dough ball.
  8. Bake for 10-12 minutes until cookies look set but centers are still soft and edges start to turn golden.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

If dough is too soft to handle, chill in the fridge for 15-20 minutes before scooping. Avoid overbaking to keep cookies soft. Store in an airtight container with a slice of bread to maintain softness. Rotate baking sheets halfway through baking for even color.
