Savory Grilled Peach Burrata Salad: Easy 20-Minute Summer Recipe

A quick and stunning summer salad featuring warm grilled peaches, creamy burrata, peppery arugula, and a tangy balsamic dressing. Ready in just 20 minutes, it’s perfect for backyard barbecues or a light weeknight dinner.

  • 3 medium peaches, ripe but firm
  • 8 ounces burrata cheese (2 small balls or 1 large)
  • 5 ounces baby arugula (about 5 cups)
  • 1/4 cup fresh basil leaves, loosely packed
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons extra virgin olive oil, divided
  • 1 teaspoon honey (optional)
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste
  • 46 slices prosciutto, torn (optional)
  • 2 tablespoons toasted pine nuts (optional)
  • 1/4 cup shaved Parmesan cheese (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Wash and pat dry the peaches. Cut each peach in half around the pit, twist to separate, and remove the pit. For larger peaches, cut each half into two wedges.
  3. Brush the cut sides of the peaches with 1 tablespoon of olive oil.
  4. Grill the peaches cut-side down for 3-4 minutes until distinct char marks appear. Flip and grill for another 2-3 minutes on the skin side. Remove and set aside.
  5. In a small bowl, whisk together balsamic vinegar, remaining 2 tablespoons olive oil, and honey (if using) until emulsified. Season with a pinch of salt and pepper.
  6. Place arugula in a large bowl. Tear basil leaves and add to the arugula. Drizzle with half the dressing and toss gently to coat.
  7. Spread dressed arugula on a serving platter. Arrange grilled peach halves on top, cut-side up.
  8. Remove burrata from brine, pat dry, and tear into large pieces with your hands. Distribute over the peaches and arugula.
  9. Drizzle remaining dressing over the top. Sprinkle with flaky sea salt and a generous crack of black pepper.
  10. Add optional toppings (prosciutto, pine nuts, Parmesan) if desired. Serve immediately while peaches are warm.

Notes

Choose peaches that are ripe but firm. Oil the grill grates well to prevent sticking. Let burrata come to room temperature before serving for best creaminess. Season in layers for maximum flavor. Serve immediately; this salad does not store well once assembled.
