Refreshing Watermelon Tajín Slushie with Lime Salt Rim

A quick and easy summer slushie combining sweet watermelon, zesty lime, and a spicy Tajín rim for a refreshing and flavorful drink.

  • 4 cups (600g) seedless, cubed watermelon
  • 2 tablespoons (30ml) fresh lime juice
  • 2 teaspoons Tajín seasoning (adjust to taste)
  • 1 to cups (240-360ml) ice cubes
  • 1 tablespoon (15ml) sugar or agave syrup (optional)
  • 1 teaspoon lime zest (optional)
  • 1 tablespoon (15g) coarse salt for the rim

Instructions

  1. Prepare the glass rim by mixing 1 tablespoon coarse salt, 2 teaspoons Tajín seasoning, and 1 teaspoon lime zest (if using) in a small shallow bowl.
  2. Rub a lime wedge around the rim of your glass to moisten it, then dip the rim into the salt-Tajín mixture, twisting gently to coat evenly. Set aside.
  3. In a blender, combine 4 cups cubed seedless watermelon, 2 tablespoons fresh lime juice, 1 tablespoon sugar or agave syrup (if using), and 1 to 1½ cups ice cubes.
  4. Blend on high until smooth and icy, thick enough to sip but not frozen solid.
  5. Taste and adjust sweetness or thickness by adding more syrup, lime juice, or a splash of cold water as needed.
  6. Pour the slushie carefully into the prepared glasses without disturbing the rim.
  7. Garnish with a lime wedge or a sprinkle of Tajín on top if desired and serve immediately.

Notes

Use chilled watermelon to reduce the amount of ice needed and avoid a watery slushie. Blend in short bursts to prevent overheating the blender. Prepare the lime salt rim just before serving to keep it crunchy. For a less salty rim, reduce salt or use a salt substitute. Leftovers can be frozen and thawed before serving.
