A light and bubbly mocktail punch with floral elderflower and zesty lemon, perfect for summer parties and easy to make in under 10 minutes.

  • 4 medium fresh lemons, juiced (about 1 cup or 240 ml lemon juice)
  • 1 cup elderflower cordial
  • 4 cups sparkling water, chilled
  • 2 tablespoons honey or agave syrup (optional)
  • Ice cubes, plenty for serving
  • A handful fresh mint leaves, for garnish
  • Lemon slices, for garnish
  • Edible flowers (optional, for garnish)

Instructions

  1. Roll the lemons on the countertop to soften them. Cut in half and juice until you have about 1 cup (240 ml) of fresh lemon juice. Strain if you prefer a pulp-free drink.
  2. In a large pitcher or punch bowl, combine the elderflower cordial and honey or agave syrup if using. Stir gently until the sweetener dissolves completely.
  3. Pour in the fresh lemon juice and stir to blend flavors.
  4. Slowly add the chilled sparkling water, stirring gently to keep the bubbles intact.
  5. Add plenty of ice cubes to chill the punch. Garnish with lemon slices, fresh mint leaves, and edible flowers if desired.
  6. Serve immediately in clear glasses, making sure each has some mint and a lemon slice.

Notes

If preparing ahead, mix lemon juice and elderflower cordial and refrigerate up to 2 days. Add sparkling water, ice, and garnishes just before serving to keep bubbles lively. Use fresh lemon juice for best flavor. Stir sparkling water gently to preserve fizz. Clap mint leaves before adding to release aroma.
