  • 2 tablespoons mayonnaise
  • 1 tablespoon white wine vinegar

  • 1 teaspoon kosher salt (plus more for salting cucumbers)
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Slice the cucumbers into thin rounds, about 1/8-inch thick. Leave the skin on for color and texture.
  2. Place the sliced cucumbers in a large bowl and sprinkle with 1 teaspoon of kosher salt. Toss well to coat. Let them sit for 10 minutes to draw out excess water.
  3. After 10 minutes, transfer the cucumbers to a colander and rinse quickly with cold water to remove excess salt. Pat them dry with a clean kitchen towel or paper towels.
  4. While the cucumbers are draining, thinly slice the red onion into half-rings. If you want a milder onion flavor, soak the slices in cold water for 5 minutes, then drain and pat dry.
  5. In a small bowl, whisk together the sour cream, mayonnaise, white wine vinegar, sugar, and black pepper until smooth.
  6. In a large bowl, combine the dried cucumbers, sliced red onion, and fresh dill. Pour the dressing over the top and toss gently until everything is evenly coated.
  7. Let the salad rest at room temperature for 5-10 minutes before serving to allow the flavors to meld.
  8. Give it one final gentle stir, then transfer to a serving bowl. Garnish with extra dill or black pepper if desired.
