  • Salt and black pepper (freshly ground)
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon lemon zest (from about 1 large lemon)
  • 2 tablespoons fresh lemon juice (about half a lemon)
  • 1 small garlic clove, minced

  • Lemon wedges (for serving, optional)
  • Fresh dill sprigs (for garnish, optional)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or foil.
  2. In a small bowl, combine the softened butter, chopped fresh dill, lemon zest, lemon juice, minced garlic, ΒΌ teaspoon salt, and β…› teaspoon pepper. Mix with a fork until well combined.
  3. Pat the salmon fillets dry with paper towels. Place them on the prepared baking sheet, skin-side down if they have skin. Drizzle with olive oil and season generously with salt and pepper.
  4. Divide the lemon dill butter evenly among the four fillets, spreading it over the top of each piece.
  5. Bake for 12-15 minutes, depending on thickness (about 12 minutes for 1-inch thick fillets). Salmon is done when it flakes easily with a fork and internal temperature reaches 145Β°F (63Β°C).
  6. Remove from the oven and let rest for 2-3 minutes. Spoon melted butter from the pan over each fillet. Garnish with fresh dill sprigs and lemon wedges if desired. Sprinkle with flaky sea salt before serving.

Notes

Bring salmon to room temperature before baking for even cooking. Pat fillets dry for better browning. Make extra compound butter to serve with sides. For busy nights, prepare the butter up to 3 days ahead. Do not overcook; check doneness early.
