This quick and easy overnight oats recipe combines creamy peanut butter, ripe banana, and rolled oats for a delicious, no-cook breakfast that comes together in just 5 minutes. Perfect for busy mornings, it’s a comforting and satisfying meal that tastes like a hug in a jar.

  • ½ cup (50g) rolled oats (old-fashioned oats)
  • ½ cup (120ml) milk of your choice (whole milk, oat milk, almond milk, or coconut milk)
  • ¼ cup (60g) plain Greek yogurt (or vanilla yogurt, or dairy-free alternative)
  • 2 tablespoons (32g) creamy peanut butter (natural preferred)
  • 1 medium ripe banana (brown spots are ideal)
  • 1 tablespoon (15ml) maple syrup or honey (optional, adjust based on banana sweetness)
  • ½ teaspoon vanilla extract (optional)
  • Pinch of salt
  • For topping (optional): sliced banana, drizzle of peanut butter, 1 teaspoon chia seeds, 1 tablespoon dark chocolate chips, 1 tablespoon chopped nuts (walnuts or almonds)

Instructions

  1. Mash the banana: In your jar or container, add half of the banana (about ¼ cup mashed). Use a fork to mash it until mostly smooth with a few small chunks left for texture.
  2. Add the wet ingredients: To the mashed banana, add the milk, Greek yogurt, peanut butter, maple syrup or honey, and vanilla extract. Stir everything together with your fork or a small whisk until the peanut butter is fully incorporated. If the peanut butter is stubborn, microwave the mixture for 10-15 seconds to soften it.
  3. Add the dry ingredients: Pour in the rolled oats and the pinch of salt. Stir well until every oat is coated in the liquid mixture. Make sure there are no dry pockets of oats hiding at the bottom.
  4. Seal and refrigerate: Put the lid on your jar and give it a gentle shake to settle everything. Place it in the refrigerator for at least 4 hours, but overnight is best (8-12 hours).
  5. Add toppings in the morning: When ready to eat, take the jar out of the fridge. Give it a good stir. If too thick, add a splash of milk and stir. Slice the remaining half of the banana on top, drizzle with extra peanut butter, and sprinkle with chia seeds, chocolate chips, or nuts if using.
  6. Enjoy cold or at room temperature: Eat straight from the fridge, let it sit on the counter for 10-15 minutes, or microwave for 30-45 seconds (be careful not to overheat).

Notes

Use room temperature ingredients for better absorption. Don’t over-mash the banana; leave a few small chunks for flavor bursts. Layer wet ingredients first, then oats, to prevent clumping. Make a double batch for the week. Add toppings just before eating to prevent browning and sogginess. If making more than 12 hours ahead, add an extra tablespoon of milk to compensate for thickening.
