A show-stopping, no-cook appetizer that looks like a turkey, perfect for Thanksgiving or any gathering. Arrange meats, cheeses, and colorful vegetables on a board in a turkey shape for a conversation-starting centerpiece.

  • 1 cup mixed olives (green and black)
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1/2 cup baby dill pickles or cornichons
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup marinated artichoke hearts, drained
  • 1/2 cup roasted red peppers, sliced
  • Assorted crackers (buttery rounds and whole wheat squares)
  • 8 oz salami, sliced thin (Genoa salami recommended)
  • 6 oz prosciutto, torn into pieces
  • 4 oz soppressata, sliced
  • 8 oz sharp cheddar cheese, cut into cubes or slices
  • 6 oz gouda cheese, sliced (smoked gouda recommended)
  • 4 oz brie cheese, left whole or sliced
  • 1 small cheese ball (about 4 oz, store-bought or homemade)
  • 2 slices prosciutto, rolled into a thin rope for the neck
  • 2 black olives, for the eyes
  • 1 small piece red bell pepper, cut into a triangle for the beak
  • Fresh rosemary sprigs
  • Fresh grapes (red or green)
  • Dried apricots or figs
  • Almonds or pecans
  • Honey or fig jam (in a small bowl)

Instructions

  1. Visualize the Turkey Shape: Place your board on a flat surface. Imagine a turkey facing left or right. Place a small bowl for the head at the front edge to guide your layout.
  2. Build the Tail Feathers: Start at the back of the board. Arrange colorful ingredients (bell pepper strips, olives, cherry tomatoes, pickles, artichoke hearts, roasted red peppers) in a fan shape. Use crackers to fill gaps and create a rounded, layered look.
  3. Create the Body: In the center, layer meats: fold salami into quarters and pile, drape prosciutto pieces, add soppressata slices overlapping slightly. Place cheese cubes and slices around the meats, with brie in the center.
  4. Form the Head and Neck: Place the cheese ball at the front for the head. Roll two prosciutto slices into a thin rope and place between body and cheese ball to form the neck.
  5. Add Face Details: Press two black olives into the cheese ball for eyes. Cut a small triangle from red bell pepper for the beak and place below the eyes. Add a small rosemary sprig on top for a feather crown.
  6. Fill the Gaps: Add grapes, dried apricots, and nuts in small clusters. Tuck rosemary sprigs between tail feathers. Place the bowl of honey or fig jam near the head or body.
  7. Final Check: Step back and adjust feathers if uneven. Add more crackers if the board feels sparse. Aim for a balanced, full look with no empty spaces.
  8. Serve Immediately or Refrigerate: If serving within an hour, leave out. If prepping ahead, cover loosely with plastic wrap and refrigerate for up to 4 hours. Take out 20 minutes before serving to let cheese come to room temperature.

Notes

Don’t overthink the shapeβ€”a slightly lopsided board looks more organic. Use a parchment paper template if nervous. Keep the board cold if prepping ahead, but let it sit out 20 minutes before serving. Prep all ingredients before starting assembly. Improvise if missing ingredients (e.g., use grapes for the head if no cheese ball).
