These star-shaped red velvet Rice Krispie treats dipped in white chocolate are a fun, festive twist on the classic treat, perfect for parties and celebrations. They combine a chewy texture with a creamy white chocolate dip for a delightful bite.

  • 4 cups mini marshmallows (or about 10 oz regular marshmallows, chopped)
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • Red food coloring (gel type recommended)
  • 8 oz white chocolate chips or chopped white chocolate
  • 1 teaspoon coconut oil or vegetable oil

Instructions

  1. Line a 9×13-inch baking pan with parchment paper, leaving a little overhang for easy removal. Lightly grease the parchment with butter or non-stick spray.
  2. In a medium saucepan over low heat, melt 3 tablespoons of unsalted butter. Add 4 cups of mini marshmallows and stir constantly until melted and smooth, about 3 to 5 minutes.
  3. Remove from heat and stir in 2 tablespoons cocoa powder and 1 teaspoon vanilla extract. Add red food coloring gradually until vibrant red is achieved (about 1 to 1.5 teaspoons gel food coloring).
  4. Fold in 6 cups of Rice Krispies cereal gently but thoroughly to coat evenly with the marshmallow mixture.
  5. Transfer mixture to prepared pan and press firmly but not too hard to maintain airy texture.
  6. Let cool completely at room temperature for about 30 minutes. Use star-shaped cookie cutters to cut out treats, pressing straight down without twisting.
  7. Melt 8 oz white chocolate chips with 1 teaspoon coconut oil in 30-second intervals in a microwave-safe bowl or use a double boiler, stirring until smooth.
  8. Dip half or entire star into melted white chocolate. Place dipped stars on parchment-lined tray or cooling rack and let set at room temperature or chill briefly in the fridge for about 15 minutes.

Notes

Use gel food coloring for vibrant color without thinning the mixture. Press the mixture firmly but not too hard to keep treats light and airy. Cut stars only after the mixture has cooled to avoid crumbling. Stir melted white chocolate frequently and add coconut oil for a glossy finish. If mixture stiffens while shaping, soften with a quick 10-second microwave zap.
