  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice (or ½ teaspoon cinnamon, ¼ teaspoon nutmeg, ¼ teaspoon ginger, pinch of cloves)
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×9 baking pan with parchment paper, leaving a 2-inch overhang on two opposite sides.
  2. Make the pecan crust: Place the pecan halves in your food processor and pulse until finely ground, resembling coarse sand. Add the sugar, flour, and salt, and pulse a few times to combine. Pour in the melted butter and pulse until the mixture looks like wet sand and holds together when pinched.
  3. Press the crust into the pan: Transfer the crust mixture to your prepared pan. Use the bottom of a measuring cup or a flat glass to press it down evenly and firmly. Bake for 12-15 minutes, until lightly golden and smells nutty. Set aside to cool while you make the filling.
  4. Beat the cream cheese: In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes. Scrape down the sides and bottom of the bowl with a spatula.

  9. Bake the bars: Place the pan in the preheated oven and bake for 35-40 minutes.   10. Cool completely: Remove the pan from the oven and place it on a cooling rack. Let it cool to room temperature, about 1 hour. Then, transfer the pan to the refrigerator and chill for at least 4 hours, preferably overnight.
