A warm, oozy baked brie wrapped in puff pastry and topped with a tart homemade cranberry compote. This easy, crowd-pleasing appetizer is perfect for Friendsgiving and comes together in under 30 minutes.

  • 12 oz fresh or frozen cranberries (about 3 cups)
  • ¾ cup granulated sugar
  • ½ cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon (optional)
  • Pinch of salt
  • 1 (8 oz) wheel of brie cheese
  • 1 sheet frozen puff pastry, thawed
  • 1 large egg (for egg wash, beaten with 1 tablespoon water)
  • Flaky sea salt (for finishing)
  • Fresh thyme or rosemary sprigs (optional, for garnish)
  • Crackers or crusty baguette slices (for serving)
  • Sliced apples or pears (for serving)
  • Honey or balsamic glaze (optional, for drizzling)

Instructions

  1. Make the cranberry compote: In a small saucepan, combine cranberries, sugar, orange juice, orange zest, vanilla extract, cinnamon, and a pinch of salt. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer for 10-12 minutes, stirring occasionally, until most cranberries have burst and mixture has thickened. Remove from heat and let cool completely. (Can be made up to a week ahead and stored in the fridge.)
  2. Preheat oven to 400°F (200°C). Let brie sit at room temperature for about 15 minutes.
  3. On a lightly floured surface, roll out puff pastry to about ¼-inch thickness, large enough to wrap the brie.
  4. Place brie in center of pastry. Cut off top rind of brie with a sharp knife. Spoon 3-4 tablespoons of cooled compote on top of brie, spreading evenly. Reserve remaining compote for serving.
  5. Fold pastry edges over brie, pleating and pinching seams to seal. Flip wrapped brie seam-side down and place on a parchment-lined baking sheet.
  6. Brush egg wash all over pastry. Optionally score decorative lines on top without cutting through.
  7. Bake for 20-25 minutes, until pastry is puffed and golden brown. If browning too quickly, tent with foil for last 5 minutes.
  8. Let rest on baking sheet for 5 minutes. Transfer to serving platter, spoon more compote on top, sprinkle with flaky sea salt, and garnish with thyme if desired. Serve warm with crackers, baguette slices, and apple slices.

Notes

Don’t overfill the pastry with compote to avoid bursting. Let brie sit at room temperature before wrapping for even melting. Compote can be made ahead. For gluten-free, skip pastry and bake brie in a dish with compote on top.
