Perfect Cranberry Brie Bites: Easy Thanksgiving Appetizer

These cranberry brie bites are a quick and easy Thanksgiving appetizer featuring flaky crescent roll dough, creamy brie, and tangy cranberry sauce, all baked to golden perfection in under 30 minutes.

  • 1 can (8 oz) crescent roll dough
  • 4 oz brie cheese, cold
  • Β½ cup cranberry sauce (homemade or canned whole-berry)
  • 1 tablespoon fresh rosemary, finely chopped
  • ΒΌ teaspoon flaky sea salt
  • Optional: honey, chopped walnuts, fresh thyme

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Line a baking sheet with parchment paper.
  2. Cut cold brie into 16 equal cubes, about Β½ inch each, keeping the rind on.
  3. Unroll crescent roll dough and separate into 8 triangles. Cut each triangle in half lengthwise to make 16 smaller triangles.
  4. Place one brie cube at the wide end of each small triangle. Top with about Β½ teaspoon cranberry sauce.
  5. Fold the two corners of the wide end over the brie and cranberry, then roll toward the pointed tip. Pinch seams to seal completely.
  6. Place bites seam-side down on the prepared baking sheet, about 1 inch apart.
  7. Bake for 12-15 minutes, until golden brown and brie is melted and bubbly.
  8. Remove from oven and immediately sprinkle with chopped rosemary and flaky sea salt.
  9. Let cool on baking sheet for 3-5 minutes before serving.

Notes

Keep brie cold until ready to cut for clean cubes. Do not overfill with cranberry sauce to prevent sogginess. Seal seams firmly and place seam-side down to prevent leaking. Can be assembled up to 24 hours in advance and refrigerated; add 2-3 minutes to baking time if baking from cold. For best texture, reheat in oven or air fryer at 350Β°F for 5-7 minutes.
