Ingredients

Scale
  • 1 cup (240 ml) brewed coffee, cooled
  • Ice cubes (enough to fill your glass)
  • 2 tablespoons (30 ml) milk of choice (whole milk recommended)
  • 12 tablespoons (1530 ml) vanilla syrup (to taste)
  • 1/4 cup (60 ml) heavy cream, cold
  • 2 tablespoons (30 ml) whole milk
  • 1 tablespoon (15 g) pumpkin puree (100% pure, not pie filling)
  • 1 tablespoon (8 g) powdered sugar
  • 1/4 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Brew and cool your coffee: Brew 1 cup of coffee using your preferred method. Pour it into a heatproof container and let it cool to room temperature. If you’re in a hurry, pop it in the fridge for 10 minutes.
  2. Prepare the cold foam ingredients: In a small bowl or directly in your frothing container, combine 1/4 cup heavy cream, 2 tablespoons whole milk, 1 tablespoon pumpkin puree, 1 tablespoon powdered sugar, 1/4 teaspoon pumpkin pie spice, and 1/2 teaspoon vanilla extract. Make sure the cream and milk are cold.
  3. Froth the cold foam: Using a handheld frother, blend the mixture until it thickens and doubles in volume, about 1-2 minutes. The consistency should be similar to melted soft serve. Alternatively, use a mason jar with a tight-fitting lid and shake vigorously for about 45 seconds.
  4. Assemble the glass: Fill a tall glass with ice cubes. Pour 2 tablespoons of milk over the ice, followed by 1-2 tablespoons of vanilla syrup. Give it a quick stir to combine.
  5. Add the coffee: Pour the cooled coffee over the ice and milk mixture. Stir gently to incorporate the syrup and milk.
  6. Top with cold foam: Slowly pour the pumpkin cold foam over the back of a spoon onto the coffee. Start in the center and let it spread outward. Do not stir.
  7. Garnish and serve: Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top of the foam. Serve immediately with a straw.

Notes

Temperature is key: keep cream cold and coffee cool. Use powdered sugar instead of granulated to avoid grittiness. Measure pumpkin puree carefullyβ€”too much will make foam heavy. For dairy-free, use chilled canned coconut cream and barista-style oat milk. Cold foam can be made up to 2 hours ahead and stored in the fridge.
