Instructions

  1. In a medium bowl, whisk together 2 ¾ cups sifted all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Set aside.
  2. In a large mixing bowl, beat 1 cup softened unsalted butter and 1 ½ cups granulated sugar with a mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Beat in 1 large room-temperature egg, 1 tablespoon vanilla extract, and ½ teaspoon almond extract until fully combined.
  4. Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. Do not overmix.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  7. On a lightly floured surface, roll out the chilled dough to about ¼ inch (6 mm) thickness. Use alphabet cookie cutters to cut out letters. Gather scraps, reroll, and repeat.
