  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1/2 cup whole berry cranberry sauce
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 cup plain Greek yogurt (2% or full-fat)
  • 1 tablespoon chopped fresh parsley (or 1 teaspoon dried)
  • 1/2 teaspoon lemon zest
  • Pinch of salt
  • 12 slider buns (whole wheat or brioche-style)
  • 1 cup fresh arugula
  • 4 slices reduced-fat provolone or Swiss cheese, cut into quarters (optional)

Instructions

  1. Prepare the cranberry spread: In a small saucepan over low heat, combine the cranberry sauce, balsamic vinegar, and Dijon mustard. Stir gently until warmed through and well combined, about 2-3 minutes. Remove from heat and set aside. Alternatively, microwave in 20-second bursts, stirring in between.
  2. Make the yogurt spread: In a small bowl, mix together the Greek yogurt, chopped parsley, lemon zest, and a pinch of salt. Stir until smooth. Set aside in the fridge while you prepare the patties. Can be made a day ahead.
  3. Form the turkey patties: In a medium mixing bowl, combine the lean ground turkey, grated onion, minced garlic, dried sage, dried thyme, salt, and pepper. Use your hands to mix gently until just combined. Divide into 12 equal portions and shape into small patties, about 2 inches wide and 1/2 inch thick. Make a small indent in the center of each patty with your thumb.
  4. Cook the patties: Heat the olive oil in a large non-stick skillet over medium-high heat. Once shimmering, place the patties in the skillet without overcrowding. Cook for 3-4 minutes on the first side until a deep golden-brown crust forms. Flip carefully and cook for another 3-4 minutes on the second side. Internal temperature should reach 165Β°F (74Β°C). If adding cheese, place a piece on each patty during the last minute of cooking and cover the pan with a lid to melt.
  5. Toast the buns: While the patties cook, split the slider buns in half. Toast them in a toaster or place cut-side down on a baking sheet and broil for 1-2 minutes until lightly golden. Watch carefully to avoid burning.
  6. Assemble the sliders: Spread a small amount of the yogurt mixture on the bottom half of each toasted bun. Top with a handful of fresh arugula. Place a cooked turkey patty (with or without cheese) on top. Spoon about a teaspoon of the warm cranberry spread over the patty. Place the top bun on and press down gently.
  7. Serve immediately: Arrange on a platter and serve warm. If serving at a party, keep warm in a low oven (200Β°F) for up to 30 minutes.

Notes

Don’t overmix the turkey to avoid tough patties. Use a hot pan for a good sear. Let patties rest 2-3 minutes after cooking. Toasting the buns prevents sogginess. Warm the cranberry sauce for better flavor and spreadability. For a crowd, cook patties in batches and keep warm in a 200Β°F oven.
