Juicy Cranberry Orange Glazed Turkey Breast

A quick and easy holiday-inspired recipe featuring a tender turkey breast coated in a sweet-tart cranberry orange glaze. Perfect for small gatherings or a special weeknight dinner.

  • 1 (3-4 lb) boneless turkey breast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 cup cranberry juice (100% juice)
  • ½ cup fresh or frozen cranberries
  • ¼ cup honey
  • 2 tablespoons brown sugar (packed)
  • 1 large orange (zest and juice)
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon cinnamon
  • Pinch of cloves (optional)
  • ½ cup chicken broth (low sodium)
  • 1 tablespoon butter
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (optional)

Instructions

  1. Take the turkey breast out of the fridge 30 minutes before cooking. Pat dry with paper towels. Mix salt, pepper, garlic powder, thyme, and rosemary. Rub olive oil over turkey, then season evenly with the spice mixture.
  2. In a small saucepan, combine cranberry juice, fresh cranberries, honey, brown sugar, orange zest, orange juice, balsamic vinegar, cinnamon, and cloves. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 10-12 minutes until thickened. Strain if desired. Set aside half for serving.
  3. Preheat oven to 375°F (190°C). Place a wire rack in a roasting pan or line with foil.
  4. Place seasoned turkey breast on the rack or in the pan. Roast uncovered for 30 minutes.
  5. After 30 minutes, brush a generous layer of glaze over the turkey. Roast for another 15 minutes, then glaze again. Continue roasting until internal temperature reaches 160°F (71°C) in the thickest part (about 20 minutes per pound, total 60-80 minutes).
  6. Remove turkey from oven, tent with foil, and let rest for at least 15 minutes. While resting, make pan sauce: place roasting pan over medium heat, add chicken broth, scrape up browned bits, bring to a simmer, whisk in butter. For thicker sauce, add cornstarch slurry and cook 1 minute. Season with salt and pepper.
  7. Slice turkey against the grain into thick slices. Drizzle with reserved glaze and pan sauce. Serve.

Don’t skip resting time; use a meat thermometer for best results; glaze in thin layers; tent with foil if browning too quickly; let turkey come to room temperature before roasting.
