Instructions

  1. Make the Miso Caramel: In a small saucepan over medium heat, melt 2 tablespoons of unsalted butter. Add 1/4 cup granulated sugar and stir continuously. When the sugar dissolves and starts turning amber (about 4-5 minutes), reduce heat to low and whisk in 2 tablespoons white miso paste until smooth. Remove from heat and set aside.
  2. Prepare the Custard Mixture: In a medium bowl, whisk together 3 large eggs, 1 cup whole milk, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, and a pinch of salt until fully combined. Set aside.
  3. Soak the Bread: Dip each thick slice of brioche into the custard mixture, soaking about 20 seconds per side. Place soaked slices on a plate.
  4. Cook the French Toast: Heat skillet over medium heat and melt remaining 1 tablespoon butter. Working in batches, cook soaked bread slices 3-4 minutes per side until golden brown and crispy.
  5. Serve: Arrange French toast on plates, drizzle with warm miso caramel sauce, and dust with powdered sugar or drizzle maple syrup if desired. Serve immediately.

Notes

Use day-old bread for best texture. Keep stirring caramel to prevent burning. If caramel thickens too fast, gently rewarm on low heat.
