A quick, easy, and nutritious chicken salad made with Greek yogurt instead of mayo, served in crisp lettuce wraps. Perfect for weight loss snacks and light meals.

  • 2 cups (about 300g) cooked chicken breast, shredded or diced
  • 1/2 cup (120g) plain Greek yogurt, full-fat or 2%
  • 1 tablespoon (15ml) Dijon mustard
  • 2 medium celery stalks, finely chopped
  • 2 green onions, sliced thin
  • 1 tablespoon fresh dill, chopped (optional)
  • 1 tablespoon (15ml) fresh lemon juice
  • Salt and black pepper, to taste
  • 810 large romaine or butter lettuce leaves
  • Optional add-ins: 1/4 cup (30g) chopped walnuts or sliced almonds, halved grape tomatoes
  • Optional: dairy-free Greek-style yogurt for vegan version

Instructions

  1. If not using pre-cooked chicken, poach about 2 medium chicken breasts in simmering water for 12-15 minutes until cooked through. Let cool slightly, then shred or dice into bite-sized pieces.
  2. Finely dice 2 celery stalks and slice 2 green onions thinly. Chop about 1 tablespoon of fresh dill if using. Wash and thoroughly dry lettuce leaves.
  3. In a medium bowl, combine 1/2 cup (120g) Greek yogurt, 1 tablespoon (15ml) Dijon mustard, and 1 tablespoon (15ml) fresh lemon juice. Stir until smooth.
  4. Add the shredded chicken, celery, green onions, and dill to the bowl with the yogurt dressing. Gently fold everything together until evenly coated. Season with salt and black pepper to taste.
  5. Spoon a generous 1/4 cup (about 60g) of the chicken salad onto each lettuce leaf. Sprinkle chopped nuts or halved grape tomatoes on top if desired.
  6. Serve immediately to keep lettuce crisp. For make-ahead, store chicken salad separately in an airtight container and assemble wraps just before eating.

Notes

Poach chicken gently at a low simmer to keep it tender and juicy. Dry lettuce leaves thoroughly to avoid soggy wraps. Fold salad gently to keep texture intact. Season gradually to avoid over-salting. Prepare ingredients ahead to speed up assembly.
