  • 4 medium fresh zucchinis, sliced into half-moons (about 1/4 inch thick)
  • 3 tablespoons extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1 medium yellow onion, thinly sliced
  • 1 cup cherry tomatoes, halved (optional)
  • A handful fresh basil leaves, chopped
  • 2 tablespoons fresh lemon juice
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and freshly ground black pepper, to taste
  • A pinch of red pepper flakes (optional)

Instructions

  1. Wash the zucchinis thoroughly and slice into half-moons about 1/4 inch thick. Set aside.
  2. Thinly slice the yellow onion and mince the garlic cloves.
  3. Heat 3 tablespoons of extra-virgin olive oil in a large non-stick skillet over medium heat until shimmering but not smoking.
  4. Add the sliced onion and cook for about 5 minutes, stirring occasionally until soft and translucent with a hint of golden color.
  5. Add the minced garlic and cook for 30 seconds to 1 minute until fragrant, being careful not to brown it.
  6. Add the sliced zucchini to the pan, stir to coat with oil, onion, and garlic. Cook for 8-10 minutes, stirring every couple of minutes until tender but still slightly crisp with some caramelization.
  7. Stir in the halved cherry tomatoes, red pepper flakes, salt, and black pepper. Cook for an additional 3-4 minutes until tomatoes soften but hold their shape.
  8. Remove the pan from heat and stir in fresh lemon juice and chopped basil leaves to wilt the basil gently.
  9. If using, sprinkle grated Parmesan cheese on top and gently stir to combine.
  10. Serve warm immediately with crusty bread or as a side to grilled meats or fish.

Notes

Cook zucchini in batches if necessary to avoid overcrowding and sogginess. Avoid burning garlic by cooking it briefly and gently. Add lemon juice off heat to retain brightness. Fresh herbs are preferred over dried for best flavor. The dish reheats well and flavors deepen overnight. For a smoky edge, finish under a broiler for 1-2 minutes watching carefully.
