Fresh Watermelon Star Cutouts with Zesty Mint Lime Dressing

A quick and refreshing summer treat featuring star-shaped watermelon pieces tossed in a zesty mint lime dressing. Perfect for parties and easy to prepare in under 15 minutes.

  • 6 cups (about 900 grams) fresh seedless watermelon, chilled, cut into 1-inch thick slices
  • 1/4 cup (about 10 grams) fresh mint leaves, finely chopped
  • Juice of 2 medium limes (about 3 tablespoons or 45 ml)
  • 1 tablespoon (15 ml) honey or agave syrup (optional)
  • Pinch of sea salt (about 1/8 teaspoon)
  • 1 teaspoon (5 ml) olive oil (optional)

Instructions

  1. Cut the watermelon into 1-inch (2.5 cm) thick slices.
  2. Use a star-shaped cookie cutter (2-3 inches wide) to press out stars from each slice, aiming for about 20-25 stars.
  3. Set the watermelon stars aside on a plate or tray.
  4. In a mixing bowl, combine fresh lime juice, finely chopped mint leaves, honey or agave syrup (if using), sea salt, and olive oil (if using). Whisk gently until blended.
  5. Gently add the watermelon stars into the bowl with the dressing and toss lightly to coat evenly without breaking the stars.
  6. Chill the coated watermelon stars in the refrigerator for 10-15 minutes to let flavors meld (optional).
  7. Arrange the stars on a serving platter or individual plates and garnish with whole mint leaves or lime wedges if desired.

Notes

If watermelon is very juicy, pat stars dry with paper towels before tossing in dressing to avoid watery salad. Freezing watermelon slices for 10 minutes before cutting can help with neater star shapes. Dressing can be made ahead and stored in fridge. Store leftovers in airtight container up to 24 hours; for best texture, store dressing separately and toss before serving.
