  • 1/4 cup fresh lime juice (about 2 limes, freshly squeezed)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon honey or agave syrup (optional)
  • Salt to taste

Instructions

  1. Rinse the cucumber well, then dice into bite-sized pieces (about 1/2-inch cubes). Cut the watermelon into similar-sized cubes, removing any seeds if needed.
  2. In a small bowl or jar, combine 2 tablespoons Tajín, 1/4 cup fresh lime juice, 2 tablespoons olive oil, and 1 teaspoon honey. Whisk or shake vigorously until fully blended. Taste and adjust salt or lime juice as needed.
  3. In a large bowl, gently toss the watermelon, cucumber, and crumbled feta. Add the chopped mint leaves if using.
  4. Pour the Tajín lime dressing over the salad and toss lightly to coat all ingredients evenly. Be gentle to avoid breaking down the watermelon.
  5. Let the salad rest in the refrigerator for 10-15 minutes before serving to allow flavors to meld. Serve chilled or at cool room temperature.
