Fresh Red White and Blue Watermelon Berry Popsicles

These vibrant and refreshing popsicles combine juicy watermelon, tangy berries, and a creamy coconut swirl for a perfect summer treat that’s quick and easy to make.

  • 2 cups seedless watermelon, cubed
  • 1 tablespoon fresh lime juice
  • 12 teaspoons honey or agave syrup (optional)
  • 1 cup full-fat coconut cream, chilled
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon powdered sugar or maple syrup (to taste)
  • 1 cup mixed blueberries and blackberries (fresh or frozen, thawed)
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Prepare the Red Watermelon Layer: Place the watermelon cubes, lime juice, and honey in your blender. Blend until smooth, about 30 seconds. Taste and adjust sweetness if needed. Pour the mixture evenly into the bottom third of each popsicle mold. Freeze for 30-40 minutes or until slightly firm but not completely frozen.
  2. Make the Coconut Cream Swirl: While the red layer chills, whisk the coconut cream, vanilla extract, and sweetener in a bowl until smooth and slightly fluffy, about 3 minutes by hand. Set aside.
  3. Prepare the Blue Berry Layer: Blend the blueberries, blackberries, lemon juice, and honey until smooth. Strain through a fine mesh sieve if desired for a smoother texture. This takes about 5 minutes.
  4. Layering the Popsicles: Once the red layer is firm, spoon a dollop of coconut cream on top of each mold. Use a toothpick or skewer to gently swirl the cream into the red layer, creating a marbled effect. Carefully pour the blueberry mixture over the coconut cream layer, filling the molds almost to the top.
  5. Final Freeze: Insert the popsicle sticks and freeze for at least 4-6 hours, preferably overnight, until completely solid.
  6. Unmold and Serve: Run warm water briefly over the outside of the molds and gently pull the sticks to release the popsicles. Serve immediately.

Notes

For a dairy-free version, use coconut cream and maple syrup instead of honey. To get more distinct layers, freeze each layer fully before adding the next, but this will increase total prep time. Running warm water over molds helps unmold popsicles easily. Fresh fruits provide better flavor and color than frozen. Straining the berry layer is optional depending on texture preference.
