Fresh Peach Basil Bruschetta Recipe Easy Homemade Whipped Ricotta Toast

A quick and easy summer appetizer featuring juicy peaches, fragrant basil, and creamy whipped ricotta on toasted baguette slices, finished with a balsamic glaze drizzle.

  • 2 medium fresh peaches, ripe but firm
  • About 12 fresh basil leaves
  • 1 cup ricotta cheese (whole milk preferred)
  • 2 tablespoons heavy cream
  • 1 small French baguette
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Sea salt to taste
  • Freshly ground black pepper (optional)

Instructions

  1. Wash and pat dry the peaches. Cut into small, roughly ΒΌ-inch dice, removing the pit carefully.
  2. Tear basil leaves by hand into small pieces. Toss with diced peaches in a bowl. Season lightly with a pinch of sea salt and a drizzle of olive oil. Set aside to marinate.
  3. In a clean bowl, add ricotta and heavy cream. Using an electric mixer or whisk, beat until smooth and fluffy. Season with a pinch of salt and black pepper if using.
  4. Cut the baguette into Β½-inch thick slices. Brush each slice lightly with olive oil on both sides.
  5. Preheat oven to 375Β°F (190Β°C). Arrange bread slices on a baking sheet and toast for 8-10 minutes, flipping halfway through, until golden and crisp. Alternatively, grill slices on a hot grill pan for 1-2 minutes per side.
  6. Spread a generous layer of whipped ricotta on each toasted slice. Spoon peach and basil mixture on top. Drizzle with balsamic glaze and sprinkle a little extra sea salt if desired.
  7. Serve immediately while bread is crisp and ricotta is cool and creamy.

Notes

If peaches are very juicy, drain excess liquid before tossing to avoid soggy bread. Don’t skip the balsamic glaze for balanced sweetness and creaminess. Toast bread just before serving to keep it crisp. Whip ricotta with cream for a mousse-like texture. Tear basil leaves instead of chopping to preserve flavor and appearance.
