Fresh Cucumber Tomato Salad with Easy Feta Dill Dressing

A refreshing and simple salad made with crisp cucumbers, juicy tomatoes, creamy feta, and fresh dill, tossed in a bright vinaigrette. Perfect for any occasion, this quick and easy recipe comes together in under 15 minutes.

  • 2 large English cucumbers (or 3 medium Persian cucumbers)
  • 3 medium ripe tomatoes (about 1 pound), Roma or cherry tomatoes work well
  • 6 ounces (170g) block feta cheese, crumbled
  • 1/4 cup (about 15g) fresh dill, chopped
  • 1/2 small red onion, thinly sliced (optional)
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1 small clove garlic, minced (optional)
  • 1/4 cup Kalamata olives, halved (optional)
  • 1 ripe avocado, diced (optional)
  • 1/2 cup diced bell pepper (optional)

Instructions

  1. Wash and dry cucumbers. If using English cucumbers, leave skin on. Cut off ends, slice lengthwise into quarters, then cut crosswise into 1/2-inch pieces (about 4 cups). If cucumbers are bitter, sprinkle with salt and let sit 10 minutes, then pat dry.
  2. Wash and dry tomatoes. Cut out core, slice in half through equator, gently squeeze out seeds and jelly, then dice into 1/2-inch pieces (about 2 cups). For cherry tomatoes, just halve them.
  3. Peel and thinly slice red onion into half-moons. If sensitive to raw onion, soak slices in cold water for 10 minutes, then drain and pat dry.
  4. In a small bowl or mason jar, combine olive oil, red wine vinegar, lemon juice, salt, pepper, and minced garlic (if using). Whisk or shake until well combined. Taste and adjustβ€”it should be bright and slightly tangy.
  5. In a large mixing bowl, add chopped cucumbers, tomatoes, and red onion. Pour dressing over top and toss gently until evenly coated.
  6. Crumble feta cheese over the salad using your fingers. Sprinkle chopped fresh dill over everything. Toss once more very gently to distribute.
  7. Let salad sit at room temperature for 10-15 minutes before serving to allow flavors to meld.
  8. Give one last gentle toss, taste and adjust salt or pepper if needed. Transfer to serving bowl, garnish with extra dill sprigs and black pepper. Serve immediately or refrigerate up to 2 hours.

Notes

Don’t skip salting the cucumbers to prevent a watery salad. Use room temperature tomatoes for best flavor. Crush feta with your fingers rather than using pre-crumbled. Let the salad sit for 10-15 minutes before serving. Fresh dill is non-negotiable; dried dill won’t work as well. Adjust salt carefully since feta is already salty.
