  • 2 large English cucumbers, thinly sliced
  • 1 cup (240 ml) full-fat Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon olive oil
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon freshly ground black pepper
  • ¼ small red onion, thinly sliced (optional)
  • 1 tablespoon fresh mint, chopped (optional)

Instructions

  1. Rinse and dry the cucumbers thoroughly. Using a sharp knife or mandoline, slice them thinly (about ⅛ inch or 3 mm thick). If using regular cucumbers, peel and deseed them to avoid excess wateriness. Place slices in a colander, sprinkle with a pinch of salt, and let sit for 10 minutes to draw out excess moisture.
  2. In a mixing bowl, combine Greek yogurt, lemon juice, olive oil, minced garlic, and chopped dill. Whisk until smooth and creamy. Add salt and pepper to taste.
  3. After cucumbers have rested, gently squeeze them in your hands or use a clean kitchen towel to remove excess liquid.
  4. Add the cucumber slices to the bowl with the dressing. If using, add thinly sliced red onion and chopped fresh mint. Toss gently until all cucumber slices are evenly coated with the dressing.
  5. Cover the bowl and refrigerate the salad for at least 15 minutes before serving to allow flavors to meld.

Notes

Salting and resting cucumbers before mixing prevents sogginess. Use fresh dill for best flavor. Chill salad for at least 15 minutes for flavor melding. If dressing is too thick after chilling, stir in a teaspoon or two of cold water or extra lemon juice. For dairy-free version, substitute Greek yogurt with coconut or almond yogurt.
