A happy accident turned into a Halloween party favorite—creamy guacamole meets classic deviled eggs for a spooky, delicious appetizer that disappears fast.

  • 12 large eggs, hard-boiled and peeled
  • 1 tablespoon yellow mustard
  • 2 tablespoons mayonnaise
  • Salt and black pepper to taste
  • 2 ripe avocados
  • 1 small lime, juiced (about 2 tablespoons)
  • 1/4 cup finely diced red onion
  • 1 small jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • 12 black olive slices
  • Small strips of roasted red pepper or pimento
  • Optional: a few drops of green food coloring

Instructions

  1. Boil the eggs: Place 12 eggs in a large pot, cover with cold water by 1 inch. Bring to a rolling boil, then turn off heat, cover, and let sit for exactly 12 minutes. Transfer to an ice water bath and cool for at least 5 minutes.
  2. Peel the eggs under running cold water. Slice each egg in half lengthwise, pop out yolks into a large bowl, and arrange whites on a serving platter.
  3. Make the guacamole: Halve avocados, remove pits, and scoop flesh into a medium bowl. Add lime juice immediately, then mash with a fork until mostly smooth with some chunks. Stir in red onion, jalapeño, cilantro, cumin, garlic powder, and salt. Adjust seasoning.
  4. Combine fillings: To the egg yolks, add mustard and mayonnaise. Mash until smooth and creamy. Season with salt and pepper. Fold guacamole into yolk mixture until well combined.
  5. Fill the eggs: Spoon mixture into a piping bag or zip-top bag with a snipped corner. Pipe filling into each egg white half, mounding slightly (about 1 tablespoon per half).
  6. Decorate: Place a black olive slice on each side of the filling for ‘bolts.’ Add a small strip of roasted red pepper across the top for a ‘scar.’
  7. Chill: Refrigerate for at least 30 minutes before serving to firm up and meld flavors.

Notes

For best results, use older eggs (buy a week ahead) for easier peeling. Press plastic wrap directly onto guacamole to prevent browning. Fill eggs up to 1 hour before serving to keep whites from getting soggy. Can be made up to 4 hours ahead and stored in the fridge.
