  • 1 tbsp soy sauce (low sodium preferred)
  • 1/3 cup teriyaki sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil (optional)
  • 46 fresh pineapple rings (about 1/2-inch thick)
  • 1 tbsp butter or oil (for grilling)
  • 4 burger buns (brioche or potato buns recommended)
  • Lettuce leaves
  • Thinly sliced red onion
  • Mayonnaise or spicy mayo (optional)

Instructions

  1. In a large bowl, combine ground beef with 1/4 cup teriyaki sauce, minced garlic, grated ginger, black pepper, salt, and soy sauce. Mix gently until just combined.
  2. Divide the mixture into 4 equal portions and shape each into a patty about 3/4-inch thick. Make a small indentation in the center of each patty with your thumb.
  3. Preheat grill or grill pan to medium-high heat. Clean and oil grates if using an outdoor grill.
  4. Brush pineapple rings lightly with melted butter or oil and set aside.
  5. In a small bowl, whisk together 1/3 cup teriyaki sauce, honey or brown sugar, rice vinegar, and sesame oil to make the glaze.
  6. Place beef patties on the grill and cook about 4 minutes per side, brushing generously with the teriyaki glaze every 2 minutes. Use a meat thermometer to check for 160Β°F (71Β°C) for medium doneness. Avoid flipping more than twice.
  7. Grill pineapple rings for 2-3 minutes per side until caramelized and grill marks appear.
  8. During the last 2 minutes of cooking, place buns cut side down on the grill to lightly toast.
  9. Assemble burgers by spreading mayo or spicy mayo on the bun base, adding lettuce, a glazed beef patty, a grilled pineapple ring, and red onion slices. Top with the bun crown and serve immediately.
