  • 2 tablespoons (28 grams) unsalted butter, melted
  • 1/2 teaspoon salt, or to taste
  • About 1/3 cup (55 grams) red, white, and blue sprinkles
  • 1 teaspoon vanilla extract
  • 2 tablespoons oil (canola or coconut) for popping

Instructions

  1. Heat 2 tablespoons of oil in a large pot over medium heat. Add 1/2 cup popcorn kernels, cover, and shake the pot regularly to prevent burning. Once popping slows to 2-3 seconds between pops (about 3-4 minutes), remove from heat. Transfer popcorn to a large bowl, discarding unpopped kernels.
  2. Drizzle 2 tablespoons melted unsalted butter over the popcorn. Sprinkle 1/2 teaspoon salt evenly. Toss gently but thoroughly to coat every kernel.
  3. Place 1 cup white chocolate chips in a microwave-safe bowl or double boiler. Melt gently, stirring often, until smooth and glossy. Stir in 1 teaspoon vanilla extract. If the chocolate is thick, add a teaspoon of coconut or vegetable oil to loosen.
  4. Line a baking sheet with parchment paper. Spread the popcorn evenly on the sheet. Using a spoon or fork, drizzle the melted white chocolate over the popcorn in a zigzag motion to create a light coating.
  5. Immediately sprinkle red, white, and blue sprinkles evenly over the white chocolate drizzle before it sets.
  6. Let the popcorn sit at room temperature for about 20 minutes or until the white chocolate hardens. Alternatively, chill in the fridge for 10 minutes. Once set, break into clusters and serve.

Notes

Do not overdo the white chocolate drizzle to avoid soggy popcorn. Use quality white chocolate for best results. Add sprinkles immediately after drizzling to ensure they stick. Freshly popped popcorn is best for crunch and adherence. To restore crunch if popcorn softens, warm in a 250Β°F oven for 5 minutes.
