  • 1 lb (450g) ground beef, 80/20 blend
  • 6 slices thick-cut bacon
  • 2 tbsp maple syrup
  • 4 slices smoked Gouda cheese
  • 2 medium yellow onions, thinly sliced
  • 4 burger buns (brioche or potato rolls recommended)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional toppings: lettuce, tomato slices, pickles, condiments

Instructions

  1. Heat 1 tbsp olive oil and 1 tbsp butter in a skillet over medium-low heat. Add thinly sliced onions with a pinch of salt and cook slowly, stirring occasionally, until golden brown and caramelized, about 25-30 minutes.
  2. While onions caramelize, lay bacon slices in a cold skillet. Turn heat to medium and cook until starting to crisp, about 5 minutes. Brush each slice with maple syrup, then flip and cook another 2-3 minutes until sticky and caramelized. Set aside on paper towels.
  3. In a large bowl, gently mix ground beef with salt (about 1 tsp) and pepper (about ½ tsp). Divide into 4 equal portions and shape each into a ¾-inch thick patty. Make a slight indentation in the center of each patty.
  4. Preheat grill or skillet to medium-high heat (about 375°F/190°C). Cook patties 4-5 minutes per side for medium doneness. Add a slice of smoked Gouda on each patty during the last minute of cooking to melt.
  5. Spread butter on cut sides of buns. Toast on grill or skillet until golden and slightly crispy, about 1-2 minutes.
  6. Assemble burgers by layering caramelized onions on the bottom bun, then the cheesy burger patty, followed by maple-glazed bacon. Add optional toppings as desired and top with the bun crown.
  7. Serve immediately while hot.

Notes

Do not press down on patties while cooking to keep them juicy. Slow caramelizing of onions is key for sweetness. Apply maple syrup glaze halfway through cooking bacon to avoid burning. Let patties rest 3-5 minutes before assembling. Use timers to manage multitasking.
