Flavorful Kielbasa Sheet Pan Dinner with Honey Mustard Glaze

A quick and easy sheet pan dinner featuring smoky kielbasa and fresh summer vegetables coated in a sweet and tangy honey mustard glaze. Perfect for a wholesome, flavorful meal with minimal cleanup.

  • 1 pound smoked kielbasa sausage
  • 1 medium zucchini, sliced into half-moons
  • 1 red bell pepper, cut into strips
  • 1 yellow squash, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, cut into wedges
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Fresh thyme or parsley sprigs for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed sheet pan with parchment paper.
  2. Slice the kielbasa into 1/2-inch thick rounds and set aside.
  3. Wash and prepare the vegetables: slice zucchini and yellow squash into 1/4 inch thick half-moons, cut red bell pepper into 1-inch strips, halve cherry tomatoes, and wedge the red onion into 1-inch pieces.
  4. In a small bowl, whisk together honey, Dijon mustard, garlic powder, smoked paprika, salt, and pepper to make the glaze.
  5. In a large mixing bowl, combine all the prepared vegetables. Drizzle with 1 tablespoon olive oil and half of the honey mustard glaze. Toss gently to coat evenly.
  6. Spread the coated vegetables evenly on the lined sheet pan. Nestle the kielbasa slices on top or between the vegetables. Drizzle the remaining olive oil and glaze over the kielbasa.
  7. Roast in the preheated oven for 25-30 minutes. Halfway through (around 15 minutes), gently stir the vegetables and flip the kielbasa slices to ensure even browning.
  8. Check for doneness: vegetables should be tender and caramelized at the edges, kielbasa browned with slight crisp edges. Add a few more minutes if you prefer softer veggies.
  9. Remove from oven, garnish with fresh thyme or chopped parsley if desired, and serve immediately while warm.

Notes

Do not overcrowd the pan to ensure even roasting. Flip the vegetables and kielbasa halfway through cooking for best caramelization. If glaze thickens too much, stir in a splash of warm water. Use smoked kielbasa for best flavor or add smoked paprika to the glaze if using non-smoked sausage. Adjust seasoning after roasting with salt or lemon juice if desired.
