  • 4 ears fresh corn on the cob, husked with some silk removed
  • 4 tablespoons unsalted butter, softened
  • Juice of 1 medium lime
  • 2 tablespoons fresh cilantro, finely chopped
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper (optional)
  • 1 tablespoon olive oil or neutral cooking oil for brushing

Instructions

  1. Prepare the Lime Cilantro Butter: In a small bowl, combine softened unsalted butter with fresh lime juice, chopped cilantro, salt, and black pepper. Mix thoroughly until creamy with flecks of green and a fresh citrus aroma. Set aside or refrigerate briefly if warm.
  2. Prep the Corn: Husk the corn, removing most silk but leaving a thin layer if desired. Brush each ear lightly with olive oil to prevent sticking and encourage a nice char.
  3. Preheat the Grill: Heat grill to medium-high (about 400°F/204°C). If using a grill pan, preheat on medium-high heat on stovetop.
  4. Grill the Corn: Place corn on grill, turning every 3-4 minutes for 15-20 minutes until nicely charred and kernels remain juicy and tender. Move ears to cooler part of grill if blackened spots appear.
  5. Apply the Lime Cilantro Butter: Remove corn from grill and while still hot, spread a generous amount of lime cilantro butter over each ear to melt and soak in flavors.
  6. Serve immediately while warm, with extra lime wedges if desired.

Notes

Butter can be prepared a day ahead and kept refrigerated. Brushing corn with oil prevents sticking and drying out. Turn corn regularly for even cooking. Vegan butter can be used for a dairy-free version. Oven roasting at 425°F for 20-25 minutes is an alternative if no grill is available.
