  • 4 garlic cloves, thinly sliced
  • 45 sprigs fresh thyme
  • ½ cup (120 ml) extra virgin olive oil
  • ½ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • 4 slices rustic bread (sourdough or country loaf)
  • Optional: pinch of red pepper flakes
  • Optional: 1 teaspoon balsamic vinegar

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Rinse 2 cups (300 grams) of cherry tomatoes and pat dry. Thinly slice 4 garlic cloves. Remove 4-5 sprigs of fresh thyme from their stems.
  3. Place the tomatoes in a single layer in an oven-safe skillet or baking dish. Scatter the sliced garlic and thyme sprigs evenly over the tomatoes.
  4. Pour ½ cup (120 ml) of extra virgin olive oil over everything, ensuring most tomatoes are submerged or coated. Sprinkle ½ teaspoon sea salt and freshly ground black pepper to taste. Add a pinch of red pepper flakes if desired.
  5. Place the skillet in the preheated oven and cook slowly for 45 to 50 minutes until tomatoes soften and skins wrinkle slightly. If garlic browns too fast, loosely cover the dish with foil.
  6. Check halfway through cooking and gently stir with a wooden spoon to redistribute garlic and thyme.
  7. While the confit cooks, toast 4 slices of rustic bread until golden and crispy using a toaster or grill pan.
  8. Remove the skillet from the oven carefully once done. Remove thyme sprigs if preferred.
  9. Optional: Stir in 1 teaspoon of balsamic vinegar to add subtle tang.
  10. Serve generous spoonfuls of warm cherry tomato confit on toasted bread and drizzle with infused olive oil.

Keep oven temperature low to gently cook tomatoes without breaking them down. Use good quality extra virgin olive oil for best flavor. Avoid overcrowding the pan to ensure even cooking.
