  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon smoked paprika (optional)

Instructions

  1. Prepare the garlic butter by combining softened unsalted butter, minced garlic, lemon juice, chopped parsley, smoked paprika, dried thyme, salt, and pepper in a mixing bowl. Mix well.
  2. Chop the chicken into 1 to 1.5 inch pieces and chop the vegetables into similar-sized chunks.
  3. Tear off four large sheets of heavy-duty aluminum foil (about 12×18 inches). Divide the chicken evenly among the packets and add the mixed vegetables on top.
  4. Drizzle 1/2 tablespoon olive oil over the veggies in each packet. Spread a generous spoonful of garlic butter over the chicken and veggies evenly.
  5. Seal the foil packets tightly, folding edges to create a sealed packet without holes.
  6. Cook the packets on a preheated grill or campfire grate over medium heat for 20-25 minutes, turning once halfway through. Alternatively, bake at 400Β°F (200Β°C) on a sheet pan for 25 minutes. Ensure chicken reaches 165Β°F (74Β°C) internally and veggies are tender.
  7. Let the packets rest for 5 minutes before carefully opening. Serve hot, directly from the foil or plated.
