  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 large avocado, sliced
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1 lime, cut into wedges
  • Optional: tortilla chips, warm tortillas, or taco shells

Instructions

  1. Cook the turkey (8-10 minutes): Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and cook for 2-3 minutes until softened. Add the ground turkey, breaking it up with a wooden spoon. Cook for 5-7 minutes, stirring occasionally, until no longer pink.
  2. Season the meat (2 minutes): Reduce heat to medium-low. Add the minced garlic and cook for 30 seconds until fragrant. Sprinkle the taco seasoning over the turkey and stir to coat. Pour in the water and stir again. Let simmer for 1-2 minutes until the sauce thickens. Taste and add salt and pepper if needed. Remove from heat and let cool for 5-10 minutes.
  3. Prep the veggies (5 minutes): Wash and dry the lettuce thoroughly. Chop into bite-sized pieces. Halve the cherry tomatoes. Slice the avocado (toss in lime juice to prevent browning if not using immediately). Chop the cilantro if using.
  4. Assemble the bento boxes (5 minutes): Divide the lettuce among the largest compartments of your containers. Add the cooled turkey to another section. Distribute the cherry tomatoes, shredded cheese, avocado slices, and sour cream among the remaining compartments. Sprinkle cilantro over the turkey or tomatoes. Tuck a lime wedge into each box. If including chips or tortillas, add them to a separate section or pack in a small baggie.
  5. Store and enjoy: Seal the containers tightly and refrigerate for up to 4 days. When ready to eat, squeeze the lime wedge over everything and enjoy cold or at room temperature. If you prefer warm turkey, microwave the meat separately for 30-45 seconds before adding it back to the box.
