Ingredients

Scale
  • 1 cup fresh strawberries, hulled and quartered (or frozen, thawed)
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries (or frozen; no need to thaw fully)
  • β…“ cup granulated sugar (adjust based on berry sweetness)
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • Β½ teaspoon ground cinnamon (optional)
  • 1 Β½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • Β½ teaspoon baking soda
  • Β½ teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • ΒΎ cup buttermilk, cold

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Lightly grease your 9-inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine strawberries, blueberries, raspberries, β…“ cup sugar, cornstarch, lemon zest, lemon juice, and cinnamon. Toss gently and set aside to macerate for about 10 minutes.
  3. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add cold cubed butter and cut into the flour mixture using a pastry cutter or two forks until it resembles coarse crumbs with pea-sized bits.
  4. Pour in cold buttermilk and stir gently until just combined. Do not overmix.
  5. Pour the berry mixture into the greased baking dish, spreading evenly. Drop biscuit dough by spoonfuls over the berries, leaving small gaps.
  6. Bake for 25-30 minutes or until biscuits are golden brown and berry filling is bubbling.
  7. Let the cobbler rest for 10-15 minutes before serving to allow the filling to thicken.

Notes

Keep butter cold for flaky biscuits. Do not overmix biscuit dough to keep it tender. Use cornstarch to prevent runny filling. If biscuits brown too quickly, tent with foil halfway through baking. Let cobbler rest before serving to avoid burns and help filling set. For dairy-free, use vegan butter and coconut yogurt with vinegar instead of buttermilk. Frozen berries can be used without thawing fully; add extra cornstarch if needed.
