  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup light lager beer
  • 2 cups sharp cheddar cheese, shredded
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Melt 1/2 cup unsalted butter in a small microwave-safe bowl or saucepan. Let it cool for a minute.
  3. In a small bowl, combine the ranch seasoning mix, 1 teaspoon cayenne pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/4 teaspoon smoked paprika (if using). Stir until evenly mixed.
  4. Place the entire 16-ounce bag of mini pretzels into a large mixing bowl. Pour the melted butter over them and toss gently until every pretzel is coated.
  5. Sprinkle the seasoning mixture over the buttered pretzels. Toss again until the pretzels are evenly coated.
  6. Spread the seasoned pretzels onto the prepared baking sheet in a single, even layer.
  7. Bake for 10 to 12 minutes, stirring halfway through, until the pretzels are toasty and the seasoning looks slightly darker.
  8. Let the pretzels cool on the baking sheet for 5 minutes to crisp up.
  9. While the pretzels bake, make the beer cheese dip: In a medium saucepan over medium heat, melt 2 tablespoons unsalted butter.
  10. Whisk in 2 tablespoons all-purpose flour and cook for 1 minute, stirring constantly, until it forms a thick paste.
  11. Slowly pour in 1 cup whole milk and 1/2 cup light lager, whisking continuously. Cook until the mixture thickens slightly, about 2 to 3 minutes.
  12. Reduce the heat to low. Add 2 cups shredded sharp cheddar cheese a handful at a time, whisking after each addition until fully melted.
  13. Stir in 1 teaspoon Dijon mustard, 1/2 teaspoon Worcestershire sauce, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Taste and adjust salt if needed.
  14. Transfer the dip to a serving bowl or keep warm over very low heat until ready to serve.

Notes

For best results, shred your own cheddar cheese from a block to avoid anti-caking agents that prevent smooth melting. Use a light lager or pilsner beer for the dip; dark or hoppy beers can make it bitter. The pretzels are best served fresh, but the dip can be made a day ahead and reheated gently with a splash of milk.
