Ingredients

Scale
  • 1 ½ cups warm water (110°F to 115°F)
  • 1 packet active dry yeast (about 2 ¼ teaspoons)
  • 1 tablespoon brown sugar
  • 4 cups all-purpose flour (plus more for dusting)
  • 2 teaspoons salt
  • 4 tablespoons unsalted butter, melted
  • ½ cup baking soda (for water bath)
  • 1 large egg, beaten (for egg wash)
  • Coarse sea salt (for sprinkling)
  • 2 tablespoons unsalted butter (for dip)
  • 2 tablespoons all-purpose flour (for dip)
  • 1 cup whole milk
  • ½ cup beer (light lager like Budweiser or Coors)
  • 2 cups shredded sharp cheddar cheese (shredded from block)
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder (optional)
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water and brown sugar. Sprinkle yeast on top and let sit for 5 minutes until frothy.
  2. Make the dough: Add flour, salt, and melted butter to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms. Turn out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  3. Let it rise: Place dough in a lightly greased bowl, cover with a clean kitchen towel, and let rest for 10 minutes.
  4. Preheat and prep: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat. Fill a large pot with about 8 cups of water and bring to a boil. Carefully add ½ cup baking soda (it will bubble up), then reduce heat to a gentle simmer.
  5. Shape the bites: Divide dough into 4 equal pieces. Roll each piece into a 1-inch thick rope. Cut into 1-inch pieces using a sharp knife or bench scraper (about 20-24 bites per rope).
  6. Boil the bites: Working in batches of 8-10, drop pretzel bites into simmering baking soda water. Boil for 30 seconds, flip, and boil another 30 seconds. Remove with a slotted spoon and place on prepared baking sheet, spacing 1 inch apart.
  7. Egg wash and salt: Brush each bite with beaten egg, then sprinkle generously with coarse sea salt.
  8. Bake: Bake for 12-15 minutes until deep golden brown. Let cool on baking sheet for 2 minutes before transferring to a wire rack.
  9. Make the beer cheese dip: While pretzels bake, melt 2 tablespoons butter in a small saucepan over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute until golden and bubbly. Slowly pour in milk and beer, whisking constantly. Cook for 2-3 minutes until thickened. Reduce heat to low, add shredded cheddar, garlic powder, and mustard powder. Stir until smooth and melted. Season with salt and pepper. Keep warm until serving.

Notes

Don’t skip the baking soda bath—it gives pretzels their signature chewy crust and dark color. Keep the water at a gentle simmer, not a rolling boil. Work quickly with the water bath; don’t let bites sit longer than 60 seconds total. Shred your own cheese for the dip to avoid graininess. For best results, serve warm.
