Easy Slow Cooker Chicken Breast Meal Prep Bowls

Tender, flavorful slow cooker chicken breast that’s perfect for meal prep bowls. With just 10 minutes of hands-on work, you’ll have juicy, shredded chicken ready to build healthy bowls all week long.

  • 2 pounds boneless, skinless chicken breasts (about 34 medium breasts)
  • 1 cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup plain Greek yogurt
  • Cooked rice or quinoa (about 1 cup per bowl)
  • Roasted vegetables (broccoli, bell peppers, zucchini, or sweet potatoes)
  • Fresh greens (spinach, arugula, or mixed greens)
  • Optional toppings: avocado slices, cherry tomatoes, crumbled feta, toasted nuts, or balsamic glaze

Instructions

  1. Prep the chicken: Place chicken breasts on a cutting board, pat dry with paper towels, and trim off any visible fat. If breasts are uneven in thickness, gently pound to an even thickness.
  2. Season the chicken: In a small bowl, mix garlic powder, onion powder, smoked paprika, dried thyme, dried oregano, salt, and black pepper. Sprinkle evenly over both sides of the chicken and rub in gently.
  3. Add to the slow cooker: Place seasoned chicken breasts in the bottom of the slow cooker in a single layer if possible.
  4. Add the liquid: Pour chicken broth and olive oil around the chicken (not directly over the top) so the liquid comes about halfway up the sides.
  5. Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken reaches an internal temperature of 165Β°F and shreds easily.
  6. Shred the chicken: Remove chicken from slow cooker, let rest for 5 minutes, then shred with two forks.
  7. Add the Greek yogurt: Return shredded chicken to the slow cooker and stir in Greek yogurt until fully incorporated. Let sit for 15 minutes if possible.
  8. Build your bowls: While chicken cooks, prepare rice or quinoa and roast vegetables. Divide rice among containers, top with roasted vegetables and shredded chicken, then add fresh greens and any other toppings.

Notes

For best results, cook on low heat. Do not lift the lid during cooking. Let chicken rest before shredding. Store chicken separately from other bowl components to prevent sogginess. The chicken tastes even better on day two.
