  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced (about ½ cup)
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder

  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water
  • 1 large bag (1316 ounces) sturdy tortilla chips (e.g., Tostitos Scoops or restaurant-style)
  • 2 cups shredded Mexican blend cheese (or cheddar, Monterey Jack, or a mix)
  • 1 can (15 ounces) black beans, drained and rinsed (optional)
  • 1 can (4 ounces) diced green chiles (mild or medium)
  • 1 cup cherry tomatoes, diced (or one large tomato, seeded and chopped)
  • ½ cup sour cream (full-fat or Greek yogurt)
  • 1 avocado, diced (or prepared guacamole)
  • ¼ cup fresh cilantro, chopped
  • 2 green onions, sliced
  • 1 jalapeño, thinly sliced (seeds removed for less heat)
  • Lime wedges (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven.
  2. In a small bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir with a fork to break up any clumps. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 2-3 minutes until softened and translucent. Add ground beef, breaking it up with a wooden spoon. Cook for 5-6 minutes, stirring occasionally, until browned and no longer pink.
  4. Reduce heat to medium. Push beef to one side of the pan and add minced garlic to the empty space. Cook for 30 seconds until fragrant, then stir into the beef. Sprinkle seasoning blend over the meat, add ¼ cup water, and stir well. Let simmer for 2-3 minutes until liquid thickens slightly and coats the beef.
  5. Drain excess fat if needed, leaving about a tablespoon for moisture.
  6. Spread tortilla chips in a single, even layer on a large sheet pan. If using Scoops, arrange cup-side up.
  7. Scatter drained black beans and diced green chiles evenly over the chips.
  8. Using a slotted spoon, distribute the seasoned beef evenly over the chips.
  9. Sprinkle shredded cheese evenly over the entire tray.
  10. Bake for 8-10 minutes until cheese is fully melted and bubbly, and edges of chips are just starting to turn golden brown.
  11. Remove from oven. Immediately sprinkle diced tomatoes, sliced green onions, and chopped cilantro over the hot nachos. Add dollops of sour cream, scattered avocado pieces, and jalapeño slices. Squeeze lime wedges over everything.
  12. Serve immediately, straight from the pan.

For best results, use room-temperature cheese and shred your own from a block to avoid anti-caking agents. Layer strategically: chips first, then beans and chiles, then beef, then cheese. Don’t overcrowd the chips—use a single layer. Watch the oven closely; start checking at 7 minutes. Use a slotted spoon for the beef to avoid greasy nachos.
