  • 3 cups fresh strawberries, hulled and sliced (or thawed frozen strawberries)
  • 1 cup granulated sugar
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup (2 sticks) unsalted butter, melted
  • 3/4 cup packed brown sugar
  • 1/2 cup old-fashioned oats
  • 1 teaspoon ground cinnamon (optional)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with butter or non-stick spray.
  2. In a large bowl, combine chopped rhubarb, sliced strawberries, and granulated sugar. Toss gently to coat and let sit for 10 minutes to draw out juices.
  3. Pour the sugared fruit mixture evenly into the prepared baking dish.
  4. Sprinkle the dry yellow cake mix evenly over the fruit layer without stirring.
  5. In a small bowl, mix brown sugar, oats, cinnamon (if using), and salt. Stir in melted butter until crumbly and moistened.
  6. Evenly sprinkle the brown sugar streusel topping over the cake mix layer without pressing down.
  7. Bake for 40-45 minutes until the topping is golden brown and crisp and juices are bubbling around the edges.
  8. Let the cake cool for 10-15 minutes before serving to allow juices to thicken.

Notes

If topping browns too quickly, loosely cover with foil halfway through baking. Let cake rest after baking for better texture. Frozen fruit can be used if thawed and drained. For gluten-free, use gluten-free cake mix and oats. For dairy-free, substitute butter with coconut oil or vegan margarine and use a dairy-free cake mix.
