Instructions

  1. Peel and slice fresh peaches into about 1/2-inch thick slices. Toss them in a mixing bowl with 3/4 cup sugar, cinnamon, lemon juice, cornstarch, and vanilla extract. Stir gently to coat all the peaches evenly. Let this sit while you prepare the biscuit topping.
  2. Preheat the oven to 375Β°F (190Β°C). Position the rack in the middle.
  3. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, baking powder, salt, and 2 tablespoons sugar. Add the cold, diced butter. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with pea-sized bits of butter.
  4. Pour in 3/4 cup whole milk or buttermilk and stir gently with a spatula just until the dough comes together. Do not overmix; the dough will be slightly sticky but hold together.
