A festive and easy-to-make 4th of July dessert featuring vibrant red, white, and blue jello layers with a creamy cheesecake middle. Perfect for summer celebrations and crowd-pleasing with a nostalgic twist.

  • 1 box strawberry or cherry flavored gelatin (3 oz) – for the red layer
  • 1 box blueberry or berry blue flavored gelatin (3 oz) – for the blue layer
  • 2 cups boiling water – to dissolve each gelatin package
  • 2 cups cold water – for each layer
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, chilled
  • Optional: 1 tbsp lemon juice
  • Fresh berries or mini star-shaped sprinkles for garnish (optional)
  • Clear plastic cups or small mason jars for serving

Instructions

  1. Prepare the Red Jello Layer: Dissolve 1 box of strawberry or cherry gelatin in 2 cups boiling water. Stir until fully dissolved. Add 2 cups cold water, mix well. Pour about 1/3 cup of this mixture into each serving cup. Chill in the fridge for 30 minutes or until set but still slightly tacky.
  2. Make the Cheesecake Filling: Beat 8 oz softened cream cheese with 1 cup powdered sugar and 1 tsp vanilla extract until smooth. In a separate bowl, whip 1 cup heavy cream to soft peaks. Gently fold the whipped cream into the cream cheese mixture until combined. Add lemon juice if using. Set aside.
  3. Add the White Cheesecake Layer: Spoon about 2 tbsp of the cheesecake mixture carefully over the set red jello layer in each cup. Chill again for 20 minutes until firm enough to hold the next jello layer without mixing.
  4. Prepare the Blue Jello Layer: Dissolve 1 box of blueberry or berry blue gelatin in 2 cups boiling water. Add 2 cups cold water. Let it cool to room temperature. Pour about 1/3 cup into each cup over the set cheesecake layer. Chill for at least 2 hours until fully set.
  5. Garnish and Serve: Before serving, add fresh berries or star sprinkles on top for extra patriotic flair. Keep chilled until ready to eat.

Notes

Chill each layer until set but still tacky before adding the next to prevent mixing. Let blue gelatin cool to room temperature before pouring to avoid melting the cheesecake layer. Use softened cream cheese for smooth texture. Clear cups showcase the layers best. Can be adapted for dairy-free and alcohol-infused versions.
