A cozy, soul-warming breakfast casserole combining the flavors of cinnamon rolls and French toast, perfect for busy mornings or weekend brunches. This easy recipe uses pre-made cinnamon rolls soaked overnight in a rich custard for a tender, flavorful dish.

Ingredients

Scale
  • 1 (12-ounce) tube or about 8 pre-made cinnamon rolls
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or 2% milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup (50 grams) granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter (optional, for drizzling before baking)
  • Powdered sugar or maple syrup for serving (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. Cut the cinnamon rolls into quarters, keeping the swirls intact.
  3. Arrange the cinnamon roll pieces evenly in a greased 9×13-inch baking dish without overcrowding.
  4. In a large bowl, whisk together 6 eggs, 2 cups milk, 2 teaspoons vanilla extract, 1 teaspoon cinnamon, 1/4 cup sugar, and 1/4 teaspoon salt until smooth, about 2 minutes.
  5. Pour the custard mixture evenly over the cinnamon roll pieces, gently pressing them down slightly to soak up the liquid.
  6. Cover the dish tightly with aluminum foil and refrigerate overnight or at least 6 hours.
  7. Remove the casserole from the fridge and let it sit at room temperature for 15 minutes while the oven heats.
  8. Optionally, drizzle melted butter over the top for a golden finish.
  9. Bake uncovered at 350Β°F (175Β°C) for 40-45 minutes until puffed and golden brown. A toothpick inserted should come out mostly clean with a few moist crumbs.
  10. Let the casserole cool for 10 minutes before serving.

Notes

Use room temperature eggs to prevent curdling. Do not skip the overnight soak for best texture. Watch baking time to avoid overbaking or underbaking. Tent with foil if top browns too quickly. For richer custard, substitute half-and-half or add heavy cream. Gluten-free and vegan adaptations are possible.
