These easy no-bake peanut butter protein balls are the perfect quick snack for busy weeks. Made with simple pantry staples, they come together in just five minutes and are great for pre-workout fuel, lunchboxes, or a healthy treat.

Ingredients

  • ½ cup (130g) creamy peanut butter
  • ⅓ cup (110g) honey
  • ¼ cup (45g) mini chocolate chips
  • 2 tablespoons (14g) ground flaxseed
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, and salt. Stir to distribute evenly.
  2. Add the creamy peanut butter, honey, and vanilla extract. Stir until a thick, cohesive dough forms. If too dry, add a teaspoon of honey or water; if too sticky, add a tablespoon more oats.
  3. Fold in the mini chocolate chips gently until evenly distributed.
  4. Optional: Chill the mixture in the fridge for 10-15 minutes to make it easier to roll.
  5. Using your hands, scoop about 1 tablespoon of the mixture and roll into smooth balls. Place on a parchment-lined baking sheet. You should get about 15-18 balls.
  6. Let the balls sit at room temperature for 10 minutes to firm up, or refrigerate for 30 minutes for extra firmness. Serve immediately or store.

Notes

For less sticky hands, lightly wet your palms with water or rub with coconut oil. The balls get better after a day in the fridge as flavors meld. Freeze for up to 3 months.
