This easy loaded chorizo queso dip for game day is proof that good things come when you least expect them. The combination of spicy chorizo, creamy melted cheese, and just the right kick of heat creates something that disappears before halftime.

  • 1 pound fresh chorizo (casings removed if using links)
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 jalapeño, seeded and finely diced
  • 1 can (10 ounces) diced tomatoes with green chilies (undrained)
  • 1 pound Velveeta cheese, cut into 1-inch cubes
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 1 cup evaporated milk
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish (optional)
  • 2 green onions, sliced, for garnish

Instructions

  1. Cook the chorizo: Heat a large skillet over medium-high heat. Add the chorizo and break it apart with a wooden spoon. Cook for 6 to 8 minutes until browned and cooked through. Use a slotted spoon to transfer to a plate lined with paper towels. Leave about 1 tablespoon of rendered fat in the skillet.
  2. Sauté the aromatics: Reduce heat to medium. Add the diced onion to the skillet with the reserved chorizo fat. Cook for 3 to 4 minutes until translucent. Add the minced garlic and diced jalapeño, cook for another minute until fragrant.
  3. Add the tomatoes: Pour in the can of diced tomatoes with green chilies (undrained). Stir and let simmer for 2 minutes until slightly thickened.
  4. Melt the cheese base: Transfer the tomato mixture to a medium saucepan or Dutch oven. Add the cubed Velveeta and evaporated milk. Heat over medium-low, stirring frequently, until smooth and glossy (about 5 to 7 minutes).
  5. Add the cheddar and seasonings: Gradually add the shredded cheddar cheese, a handful at a time, stirring until each addition is fully incorporated. Sprinkle in cumin, smoked paprika, and chili powder. Stir until everything is melted and silky (about 3 to 4 minutes).
  6. Combine with chorizo: Add the cooked chorizo back into the cheese mixture and stir until evenly distributed. Taste and adjust seasoning with salt and pepper if needed.
  7. Serve immediately: Transfer to a serving bowl. Garnish with fresh cilantro and sliced green onions. Serve warm with tortilla chips.

Notes

For best texture, shred cheddar from a block (pre-shredded has anti-caking agents). Use evaporated milk (not sweetened condensed) for smoothness. If queso thickens as it sits, stir in a splash of warm evaporated milk or regular milk. Do not freeze; refrigerate leftovers for up to 4 days.
